Spiced Lemon Slices
A most delicious and unusual accompaniment for curries, cold meat
platters, or an antipasto.
Ingredients: 8 lemons, scrubbed and dried
Salt
Hot paprika or chilli powder
Goog quality vegetable oil Steps
 1. Cut each end from lemons,
then cut lemons in half lengthwise. Slice lemons and arrange in a
colander, sprinkling salt between each layer. Let stand overnight.
2 Drain off any liquid which has not escaped through colander. In clean
sterilized jars, arrange layers of lemon slices, sprinkling little hot
paprika or chilli powder between each layer. When jars are almost full,
carefully pour in enough oil to cover lemons slices.
3 Wait for oil level to go down then top up with extra oil as necessary.
When jars will hold no more oils, cover and store in a cool dry
place.
Pickle may be used after 4 - 6 weeks. Refrigerate jars after opening.
