How To Make Pickles       


Pickled Onions

Ingredients:

1 kg onions
Water
Salt
3 cups white vinegar (or brown)
Milk
1 cup honey
3 tablespoons brown sugar
Cloves
Red chillies

Steps

1. Use small even-sized silver skin onions (1 kg) and keep the onions immersed in a bowl of water while peeling (helps the eyes).

2. Soak in strong salt and water overnight (1 cup of salt to 4 cups of water). Drain, rinse and pat dry. Place in large bowl, cover completely with boiling milk. When milk is quite cold drain well and wipe dry each onion. Pack into jars, place a bright red chili half way down each jar.

3 In an enamel saucepan combine the white vinegar, brown sugar, honey, a little salt, and a few cloves. Bring to boil stirring all the time and while hot pour over the onions.

4 Do not seal down till quite cold. Vinegar must completed cover onions. Keep at least 2 weeks before using.
