How To Make Pickles       


Pickled Chokes

Ingredients:

12 chokes
Chillies
1.5 litres vinegar
Salt
1 blade mace
Peppercorns
2 bay leaves
4 tablespoons sugar
Cloves

Steps

1. Cut chokos into 4 lengthwise, peel, remove centre, wash well, boil in salted water for 20 minutes, strain.

2. Put vinegar, sugar, chillies and muslin bag containing spices on to boil for 3 minutes.

3 Place chokos in jar, add strained vinegar. Seal in airtight jar.
